Red Bean and Mustard Sweet Potato Sandwich Recipe

Ingredients
4 slices of bread
2 large sweet potatoes
Soy sauce - appropriate amount
Hon mirin - appropriate amount (hon mirin alone will make the dish tastier)
Salt - a little
2 tablespoons of sugar
2 tablespoons of mustard seed oil - appropriate amount (other oils can be used)
2 tablespoons of sesame seeds
Water - enough to cover the sweet potatoes
2 teaspoons of oriental sugar spice
Step 1
Boil the red beans that have been soaked in water since the night before. (Don't make them too sweet)
Cut the sweet potatoes into strips and soak in water for about 15 minutes.
Step 2
Heat a frying pan and when you can smell the mustard oil
Add the sweet potatoes and stir fry.
When the color starts to change, add the sesame seeds and stir fry until they are fragrant.
Step 3
Add water, salt, sugar, soy sauce, and Hon mirin, cover, and boil over low heat for about 20 minutes.
When the water has evaporated, open the lid and cook until the water has evaporated,
taking care not to burn it.
Step 4
Place the red beans on the bread, then the mustard sweet potatoes,
and sandwich together and cut to finish.
Sprinkle some oriental sugar spice on top to make
an even more exotic sandwich.
