エッグマスタードカリーのレシピ
Serves 2-3
Ingredients
4 eggs
1 onion
1 tomato
3 shiitake mushrooms
1 clove ginger
1 clove garlic
4 green chillies
200ml water
200ml coconut milk
1 tablespoon ketchup
Mustard seed oil (or other oils) to taste
Salt to taste
1/2 teaspoon mustard seeds
Pinch of curry leaves (optional)
1 tsp paprika powder (optional)
1/2 tsp hing (optional)
1/2 tsp fenugreek powder (optional)
Curry spices or
Special green spices (as desired)
Step 1
Boil the eggs until they are hard,
and make cuts in them so that the flavor can penetrate easily
Thinly slice the shiitake mushrooms and onions,
finely chop the garlic and ginger,
and roughly chop the tomatoes.
Cut the green chillies diagonally.
Step 2
Put mustard seed oil and mustard seeds in a frying pan, cover with a lid, and cook over low heat until the crackling of the mustard stops.
Add dried chillies and curry leaves, heat until fragrant, and fry the onions, shiitake mushrooms, garlic, ginger and green chillies until soft.
Step 3
Add the tomatoes and fry until they are slightly firm.
Reduce the heat, add ketchup, salt and curry spices or special green spices, and fry for about 30 seconds until fragrant. (Be careful not to burn!)
Step 4
Add water and coconut milk, bring to a boil, add eggs, cover and cook for about 8 minutes, shaking the frying pan to avoid burning, and it's done.
Using the spice mix, it's super quick and easy to make, but it's the best curry. If you love eggs, it's delicious to die of.
